
I can’t stand a hot kitchen. And in August the whole world just feels like one gigantic hot kitchen! My hubs usually grills on Sundays. I love it, because it doesn’t heat up the kitchen, and he does most of the cooking! And oh, by the way, it’s always delicious. But I recently gave the guy a break from the grill and decided to cook up some yummy French Dip Sandwiches in the Instant Pot. The Instant Pot makes it quick AND easy, and one very special ingredient, beer, makes it amazing! Read on for my Instant Pot French Dip Beer Sandwich recipe.
Ingredients:
3-4 lb. Chuck Roast
One medium onion, sliced
1-2 cloves garlic, minced
2 cans Beef Consomme
1 can French Onion soup
1 bottle dark beer (example: Guinness or Shiner Bock)
Salt & Pepper
1 T. Olive Oil
Hoagie or Phillie style buns
Provolone Cheese
Directions:

Turn Instant Pot on to ‘Saute’

White the pot is heating up, sprinkle the chuck roast with salt and pepper.

When Instant Pot reads ‘Hot’, drizzle Olive Oil into the pot, and carefully place the roast in the pot.

Brown the roast on both sides, about five minutes per side.

Turn off the Instant Pot, remove the roast, and pour a little of the consomme in the pot and loosen up the browned bits, deglazing the pot.

Add the garlic and onion to the pot.

Pour in the rest of the consomme and the French Onion Soup.
Beer going in! -
Carefully place the roast back into the pot and pour in ½ to ¾ of the bottle of beer.

Place the lid on the Instant Pot, and make sure the nozzle is turned to ‘sealing’.

Select the meat/stew function, and increase time to 80 minutes.

Step away from the Instant Pot, and let her work her wonderful magic.

Allow a ‘natural pressure release’, by letting the Instant Pot stay in Keep Warm mode for 10-20 minutes. This will ensure the meat is extra tender and juicy!
Serving:
Scoop generous pieces of the delicious and tender roast and yummy onions onto toasted buns and top with a slice or two of provolone cheese. Ladle the scrumptious oniony broth into ramekins for dipping.
