Delicious Balsamic Onions

Hi friends! The hubs has a crazy six day work schedule, and for us, Sunday is our day to run errands, rest, recharge, and recuperate! In short, it’s our favorite day, because it’s the most quality time we get to spend together. Another activity we enjoy is cooking and eating together! Actually, he does most of the cooking, but who’s counting? One of our go-to meals on Sunday evenings is what we call our “big salad”…it’s basically everything but the kitchen sink thrown onto a plate…tons of greens and veggies and everything good and healthy. One of our recent discoveries is Balsamic Onions. They’re the perfectly sweet and healthy touch to an otherwise boring salad.

One of the first meals I made in the Instant Pot was Roast Beef. As I’ve become more comfortable with my Instant Pot, I’ve begun experimenting more, and adapting recipes I’ve previously used in my trusty slow cooker. This recipe is an adaptation of a tried and true recipe I’ve followed for years. In fact, I’ve prepared roast beef with coffee for so long, I didn’t actually have a recipe… instead it’s become one of those ‘throw this stuff in and cook it’ recipes. As I’ve shared before, I rarely cook anymore. It’s one of the perks of having an empty nest! The hubs and I both work full time jobs, his hours are ridiculous, and there’s not much point in cooking a meal when there’s nobody here to enjoy it! But every once in awhile, I’ll see a recipe that makes me want to dust the cobwebs off my brain, just to see if I still know how to cook! What can I say? I love a challenge! I saw this recipe for Lemon Chicken with Garlic and Olives, created by Melissa Clark, in the latest issue of People Magazine. How did it turn out? Quick and Easy Instant Pot Beef Curry

Mama was the best cook. And she loved to experiment with recipes, adapting them and making them her own. One very special dish was her Beef Curry. It was our family’s favorite, and  it became the go-to dish for birthdays. I’m pretty sure that every member of our clan had the privilege of celebrating their birthday at Mom and Dad’s house with a heaping plate of Beef Curry and Rice, followed by ‘the cake’, which was a simple chocolate sheet cake slathered with chocolate and pecan icing.
