This delicious potato salad has been a family staple of ours for years. It was introduced to us by my brother in law John, who is a fabulous cook. The recipe was passed down from his grandmother, and I’d like to give him (and his grandmother) full credit, and a huge word of thanks for sharing it with me so many years ago. One of the first meals I made in the Instant Pot was Roast Beef. As I’ve become more comfortable with my Instant Pot, I’ve begun experimenting more, and adapting recipes I’ve previously used in my trusty slow cooker. This recipe is an adaptation of a tried and true recipe I’ve followed for years. In fact, I’ve prepared roast beef with coffee for so long, I didn’t actually have a recipe… instead it’s become one of those ‘throw this stuff in and cook it’ recipes. As I’ve shared before, I rarely cook anymore. It’s one of the perks of having an empty nest! Quick and Easy Instant Pot Beef Curry
Mama was the best cook. And she loved to experiment with recipes, adapting them and making them her own. One very special dish was her Beef Curry. It was our family’s favorite, and it became the go-to dish for birthdays. I’m pretty sure that every member of our clan had the privilege of celebrating their birthday at Mom and Dad’s house with a heaping plate of Beef Curry and Rice, followed by ‘the cake’, which was a simple chocolate sheet cake slathered with chocolate and pecan icing.
