This delicious potato salad has been a family staple of ours for years. It was introduced to us by my brother in law John, who is a fabulous cook. The recipe was passed down from his grandmother, and I’d like to give him (and his grandmother) full credit, and a huge word of thanks for sharing it with me so many years ago. I love family recipes that have history behind them, don’t you? I’ve always made this potato salad the traditional way, boiling the potatoes in one pan, and cooking the other ingredients in another – basically making a huge mess in my kitchen. But this year, as Independence Day approached I started mulling over the idea of preparing the salad in my Instant Pot, and just decided to go for it! It turned out so good, and was so super easy to prepare, I thought I’d share the recipe with you.

One of the first meals I made in the Instant Pot was Roast Beef. As I’ve become more comfortable with my Instant Pot, I’ve begun experimenting more, and adapting recipes I’ve previously used in my trusty slow cooker. This recipe is an adaptation of a tried and true recipe I’ve followed for years. In fact, I’ve prepared roast beef with coffee for so long, I didn’t actually have a recipe… instead it’s become one of those ‘throw this stuff in and cook it’ recipes. As I’ve shared before, I rarely cook anymore. It’s one of the perks of having an empty nest! The hubs and I both work full time jobs, his hours are ridiculous, and there’s not much point in cooking a meal when there’s nobody here to enjoy it! But every once in awhile, I’ll see a recipe that makes me want to dust the cobwebs off my brain, just to see if I still know how to cook! What can I say? I love a challenge!
