Rustic Homemade Noodles with Bacon & Peas

Delicious comfort food featuring easy homemade noodles and bacon!

Ingredients
  

  • 2 cups Flour
  • water
  • 4-5 slices thick sliced bacon diced
  • 1/2 small onion chopped
  • 10 oz frozen peas
  • 2 cloves garlic minced
  • 1/4 cup parmesan cheese grated
  • lemon (optional)

Equipment

  • Large Pot
  • Skillet
  • Rolling Pin
  • Sharp Knife

Method
 

The Noodles
  1. Mix flour and water until it becomes a smooth ball that will be easy to roll.
  2. Flour your work surface, and roll out dough into a rectangle shape to the thickness you prefer.
  3. Flour the top of the dough so it won't stick, then roll the dough into a jellyroll, and slice into 1/4" slices.
  4. Untangle the noodles, unrolling them as you go.
  5. Drop the noodles into boiling, salted water, and cook until al dente. Drain, and reserve the pasta water.
The Bacon & Peas
  1. While the noodles are cooking, saute the bacon over medium to high heat in a large skillet until nice and browned, about 5-6 minutes. Transfer the bacon to a paper towel lined plate.
  2. In the same skillet saute the chopped onions until soft, then stir in the peas and minced garlic. Saute the mixture for about  2-3 minutes.
  3. Stir in the Parmesan cheese and your noodles, and add a little pasta water to get it good and blended together.
  4. Finish with a bit more parm and a squeeze of lemon juice if you're feeling fancy!
  5. Enjoy!
